I've found an excellent source of information for Animals on Everest. Although it doesn't give the exact heights they can live at, it gives me a direction from which I can research further:

A David Attenborough documentary about the Himalayas - Part of the Natural World series on BBC:
This doesn't specifically address Mt. Everest but it gives me a good overview of what it living on the Himalayas  and it does have some interesting points about Mt. Everest.
